When a customer cancels an order on BigCommerce, how is it updated in Zoho Books?

You can choose to reverse the transaction in Zoho books when a customer cancels an order on BigCommerce. To do this, from the connector dashboard settings, enable the following option:

When an Order is refunded in BigCommerce, change Sales Order status in Zoho Books to 'Open' and delete associated Invoice.
